A Few of my Favorite Microwave Meals – Fast & Easy!
“evol.” Butternut Squash & Sage Ravioli
If you’re tired of cooking and cleaning, I have some fast and easy ideas for you. And they’re visually appealing, distinctive, delectable – and healthy, of course – microwave meals I can swear by. And, believe me, there aren’t many of those! Here are just a few…
Restaurant quality! Serve with chicken sausage, shrimp, mushrooms, salad, tomato soup, you name it!
Tastes like an Indian restaurant! All this needs is a veggie. Buy Trader Joe’s Frozen Wild Mushroom Mix, Frozen Grilled Vegetables or a Salad! You could replace the white rice with something healthier like barley, whole grain pasta or brown/black rice.
Tastes like “Drunken Noodles” in a Thai Restaurant! Serve with roasted chicken, sautéed tofu, brown/black rice, whole grain noodles, barley, whatever is easy!
My favorite!
It’s better than you’d think!
Try barley instead of rice or pasta. It has a nutty flavor and chewy texture. It’s higher in fiber and nutrients, and it lowers blood cholesterol and glucose!

Thank you Katherine! You hit on two of my favs. I love Trader Joe’s Indian food and just pair it with a microwavable bag of Birdseye Steamables broccoli. And the tomato soup is so good; I just add some whole grain crackers and a big salad. I will look for the butternut squash and barley (are they also from Trader Joes?).
Thank you!!!
Katherine
Cindy! What a pleasure to hear from you! Yes. The 10-Minute Barley is Trader Joe’s, and I think the EVOL. brand dinner I also got at Trader Joe’s (?). The ravioli was AMAZING!!!!! The eggplant is very spicy!

Hi Cindy! I went to Trader Joe’s yesterday and didn’t see the evol. brand frozen meals. I don’t remember where I bought it! Safeway? CVS? Walgreens? But, a client of mine went online and found them at Harris Teeter – and found that you can order them online. Honestly, they are so good that I would buy every type and try each. Let me know what you think! XOXO Katherine
