  • Katherine, you are right on target!
    Following your ‘Diet Simple’ principles, combined with ideas from recent Mayo Clinic book on healthy diet, my wife and I have lost over 40 lbs, and feel fit as fiddles… The secret, as you suggest, is unlimited fresh fruits and vegetables, lots of walking, and moderation in all these so-called ‘bad foods’ that are actually good for us…. Whole grains, eggs, dairy/yogurt, and that small glass of red wine in the evening…. Glad to hear, too, that Soy is great… that’s what I use for my cereal and coffee… reversing the old breakfast pattern of a bowl of (whole grain) cereal topped with fruit: we have a big bowl of fresh fruit topped with a little whole grain cereal… Nice… Dessert, too, is a bowl of raspberries or strawberries, with some blue- or blackberries added.. and a little fat-free half ‘n half or soy creamer… Never been healthier.. and now almost back to my college weight for my 50th reunion!
